La Vuelta al Mundo en 80 Cupcakes - Around the World in 80 Cupcakes: España

España... Madre mía!! ..tantas y tantas cosas que me gustan de la comida española, de todas y cada una de las diferentes regiones de la península.. es increíble la diversidad, la forma de hacer, lo delicioso de sus platos.

Me ha costado trabajo decidirme :-).. pude haber hecho algo con el vino, con el jamón, con el aceite, con los frutos secos..pero al final ha ganado el queso!!
Confieso que soy dulcera de corazón (y de estómago) y hay un dulce que me encanta: el cabello de ángel (Ay! las empanadillas, las cocas, las ensaimadas rellenas, los hojaldres, las bayonesas, ñaaam..) y entre mi pasión por los quesos y mi "golosidad" he creado estos: Cupcakes de Cabello de Ángel con Queso de Burgos (si, de Burgos!) y Merengue de Naranja (que aunque tenga orígenes asiáticos esta la ponéis de Valencia!)


Cupcakes de Cabello de Ángel con Queso de Burgos y Merengue de Naranja
Ingredientes - 12 cupcakes
100 g de mantequilla
80 g de azúcar blanco
2 huevos L (o 3 M)
125 g de harina de trigo
50 g de maizena
2 cucharaditas de Royal (levadura química en polvo)
200 g de Cabello de Ángel
125 g de queso de Burgos (sin sal añadida de preferencia)

Cómo se hacen
  1. Primero: todos los ingredientes a temperatura ambiente (el queso una media hora fuera de la nevera)
  2. Precalentar el horno a 180ºC y preparar los moldes para las magdalenas con las cápsulas de papel.
  3. Tamizar harina, royal y maizena. Reservar.
  4. Batir la mantequilla con el azúcar hasta que acremen.
  5. Agregar los huevos uno a uno y seguir batiendo hasta integrarlos.
  6. Aquí viene lo divertido: Agregar el cabello de ángel y el queso y batir con entusiasmo. Veréis como el queso se hace pedacitos.
  7. Agregar el harina y batir a baja velocidad, lo justo para integrarla.
  8. Rellenar los moldes a 3/4 de su capacidad y hornearlos por 20 minutos. Comprobar con un palillo de madera hasta que salga limpio.


Merengue de Naranja (de Valencia)
50 g de azúcar glass
50g de jugo de naranja*
2 claras
una pizquita de sal
* pesar el jugo de una naranja, si no llega a los 50g completar con agua
Cómo se hace
  1. Poner a fuego bajo el jugo de naranja y el azúcar glass para hacer un almibar. Remover de vez en cuando. Retirar del fuego cuando notemos que al sacar la cuchara se hace un hilito fino.
  2. Batir las claras a punto de nieve. Agregar la sal y posteriormente el almibar poco a poco. No dejéis enfriar mucho el almibar porque se poner duro y no hay manera humana de echarlo a las claras.

Decorar los cupcakes cuando estén totalmente fríos.
Podéis poner toppers de piel de naranja escarchada.

Spain ... OMG!!.. so many things that I like from the Spanish food, from each and every one of the different regions of the peninsul.. diversity is amazing, the way they do their delicious dishes.

I've worked hard to decide in this cupcakes :-) .. I could have done something with wine, with ham, with oil, with nuts or almnods.. but eventually won the Cheese!!

I confess myself a "sweet tooth" and there is a sweet that I love: Cabello de Ángel, literally, angel hair (Ow! the empanadillas, the cocas, the stuffed ensaimadas, the puff pastries, the bayonesas, Yum!..) and because my passion for cheese and my "sweetness" I created Cupcakes with Angel Hair, Burgos cheese and Orange Meringue (please, use one from Valencia!)

Cupcakes with Angel Hair, Burgos cheese and Orange Meringue
Ingredients - 12 cupcakes
100 g butter
80 g of white sugar
2 eggs L (or 3 M)
125 g wheat flour
50 g of cornstarch
2 teaspoons Royal (baking soda powder)
200 g of Angel Hair
125 g of Burgos cheese (preferably no salt added)

How to
Before you start: all ingredients at room temperature (the cheese half an hour out of the fridge)
Preheat oven to 180°C (350ºF) and prepare the liners for your cupcakes.
Sift flour, cornstarch and Royal.
Cream butter and sugar until fluffy and creamy
Add eggs one by one and continue beating until integrate.
Here comes the fun part: Add the Cabello de Ángel and cheese and beat with excitement. You will see how cheese becomes in little bits.
Add the flour and beat on low speed, just enough to integrate.
Fill the liners to 3/4 and bake for 20 minutes. Check with a wooden stick until it is clean.

Meringue
50 g powdered sugar
125 ml orange juice
2 egg whites
a pinch of salt

How to make Meringue
Make a syrup with orange juice and sugar glass.
Remove from heat when putting it between two fingers and unstick them, you get very thin threads of syrup. Let it cool.
Beat egg whites until stiff. Add the salt and then the syrup slowly.

Decorate the cupcakes when they are completely cool.
You can use sugared orange peel as toppers.
